  1. Preheat the oven to 400 degrees F.
  2. Arrange sweet potato slices on a cookie sheet. Sprinkle with olive oil and salt and bake for 20 minutes.
  3. Allow the sweet potato rounds to cool.
  4. Line the bottom of a medium-sized skillet with the sweet potato rounds. Sprinkle with paprika and diced garlic.
  5. Add black beans, jalapeño if desired, and cheese on top. Broil for 5-10 minutes or until the cheese melts.
  6. Garnish with avocado, pico de gallo, and green onion, cilantro, if desired. Serve immediately.
