The Best Vegan Chili is one of my favorite recipes to warm up the cold winter days. I make a huge pot, and first we eat it as chili, then we add it to a salad, then we eat it over rice and finally, we make sandwiches with what’s left. Vegan chili tastes even better the next day! The Best Vegan Chili is best served with vegan sour cream and vegan grated cheese on top.
Sometimes, I add a few extra cups of water to the dish, to make a nice chili soup. My older children can warm up their own meals when we have a pot of chili happening.
The Best Vegan Chili recipe is very easy: you cook some veggies, then add beans and canned tomatoes. The key is in the right spices, however. Smoked paprika is a must for the right balance of flavor, and so it cayenne pepper. Taste and adjust the level of these seasonings. I prefer cooked beans. I simply presoak then in water overnight, then drain and cook for an hour or so. Canned beans are fine, too, as long as you rinse them well.
The Best Vegan Chili doesn’t need to simmer for hours on the stove. Once the dish is all assembled, 25-30 minutes on a low flame is all the time that’s needed.

- 1 medium Onions chopped
- 5 tablespoons Coconut oil or olive oil divided
- 2 Carrots peeled and shredded
- 2 cups Baby spinach leaves
- 1/2 medium bunch Cilantro chopped
- 6 cups Cooked black or pinto beans or 4 cans, rinsed
- 2 cups Cold water
- 1 large can Tomatoes
- 1/4 teaspoon Smoked paprika
- 1/8 teaspoon Cayenne pepper
- 2 teaspoons Sea salt
- 3 cloves Garlic cloves diced
- Saute the onion in 2 tablespoons of oil for 4 minutes.
- Add carrots, spinach, cilantro, the rest of the oil and saute for another 4 minutes or until soft.
- Add beans, water, tomatoes and spices. Bring to a boil.
- Lower the flame, add spices and salt and saute for about 30 minutes. If the chili is getting dry for your taste, add a cup or two of water.
- Taste and adjust the seasonings if needed.
- Allow to stand, covered, for 30 minutes to develop flavor.
