Sweet Potato Sandwich is a vegan heaven: roasted sweet potato slices, avocado, tomato, onion, sunflower sprouts and a tahini spread. This sandwich is full of vitamins A, C, B-vitamins, calcium, iron, magnesium and more! It is also incredibly delicious and filling. If, like me, you like the make a lot of roasted sweet potatoes, the  Sweet Potato Sandwich is a great way to utilize the leftovers.

Sweet Potato Sandwich


for the sandwich:

4 slices Bread, sliced (or 2 buns)

1 cup roasted sweet potatoes, (peeled and  mashed)

1 tomato, sliced

1 Hass avocado, sliced

1/2 onion, sliced

1 cup sunflower sprouts

Sea salt to taste

for the tahini spread:

1 tablespoon tahini

1 teaspoon Olive oil

1 tablespoon Water

1 teaspoon Lemon juice

Sea salt and pepper to taste



Layer the vegetables on the bread or on the bun. Add a little bit of salt.

Whisk the sauce ingredients to combine.

Pour the sauce over the vegetables and close the sandwich with another piece of bread.
