Sugar-Free, Vegan Raspberry Cream is light, tart, yet sweet, healthy dessert. It takes a little bit of prep work ( you need to  remember to stick that can of coconut milk in the refrigerator overnight,) but other than that it’s a five-minute deal. My children love this pretty and light dessert.

  1. Chill your coconut milk in the refrigerator overnight, being sure not to shake the can to encourage separation of the cream and liquid. The next day, chill the blender 10 minutes before blending.
  2. Scrape out the top, thickened cream and leave the liquid behind.
  3. Place the cream in a high-speed blender. Blend for 30 seconds or until creamy.
  4. Add the rest of the ingredients and blend until creamy and smooth - about 1 minute.
