  1. Preheat the oven to 350 degrees F.
  2. Put the cauliflower in a pot. Cover the cauliflower in water, so that there is one inch of water over the vegetable.
  3. Cook for 7 minutes, or until soft, but not mushy. Drain. Put the cauliflower into the lightly oiled large casserole dish.
  4. In a bowl, combine butter, kefir, soda, salt, 2 cups of cheese and semolina or rice flour. Pour the mixture over the cauliflower and gently mix.
  5. Sprinkle with remaining cheese and bake for about 13 minutes, or until the cheese on top begins to turn lightly brown.
