Ingredients

Instructions

  1. Put the carrots into a large pot and cover with water, so that there is one inch of water over the carrots. Bring to a boil and cook until soft ( test with a fork.)
  2. Saute onions and ginger in butter or coconut oil for about 5 minutes. Add the onions and the ginger to the carrots.
  3. Add all other ingredients and blend, using an immersion blender, until smooth.
  4. Serve with a dollop of heavy cream or cocout cream on top.
