Kale, Roasted Sweet Potato and Hummus Bowl is a colorful, nourishing dish, full of all kinds of flavors. It is also full of vitamins A, B-group vitamins, C , K, calcium, magnesium, iron and and more! I like to serve this bowl hot or cold: it’s very tasty either way.
I use a scoop of homemade hummus for this bowl, but store bought hummus should be fine, too.
You can also choose a few different dressings for the bowl: I opted for the humble olive oil and lemon juice combo, but tahini dressing would be great here, as well as carrot ginger or balsamic vinaigrette.

Kale, Roasted Sweet Potato and Hummus Bowl
2 kale leaves, sliced
1/2 avocado, sliced
2 cucumbers, sliced
1 large carrot
1/4 bunch parsley, diced
1 large sweet potato, roasted (see recipe link above)
2 scoops hummus
1 tablespoon olive oil
1 teaspoon lemon juice
Sea salt and pepper to taste
Layer all ingredients and serve.
