Roasted Curried Cauliflower is one of these simple dishes that you make and get amazed that you had never made it before, because of good it tastes. Slightly spicy and crunchy in all the right places, this dish is loved by everyone.

I grew up on cauliflower, but it was always cooked very bland, and I really dislike bland! So, when I needed to cook the two heads of cauliflower I had sitting in the fridge, I was hesitant to make another boring dish. Just then my gaze turned to the spice rack. I saw curry powder, and from then on, everything was history.

Roasted Curried Cauliflower is simply amazing with hummus or with a  side of avocado. It’s excellent over a bowl of quinoa or over virtually any salad. Roasted Curried Cauliflower can be eaten both cold and hot.

    Instructions

    1. Preheat the oven to 375 degrees F.
    2. Combine all ingredients.
    3. Put the mixture on a cookie sheet in a single layer and roast for about 35 minutes, turning halfway. The cauliflower should be softer, yet still somewhat crunchy, when done.
