Hot and nourishing Curried Potato Soup is spicy and full of vegetables. This fragrant soup is full of flavor and warmth.

Instructions

  1. Saute the onion and the potato in olive oil for 6 minutes.
  2. Add carrots and celery and saute for another 3 minutes.
  3. Add 8 cups of water, parsley and spices.
  4. Bring to a boil, then simmer for 10 minutes.
  5. Add garlic. Add salt to taste, allow to stand for 15 minutes then serve.
