Instructions

  1. Preheat the oven to 450 degrees F.
  2. Line a baking tray with parchment. Peel, quarter and slice potatoes roughly, toss with oil.
  3. Roast for 20-30 minutes.
  4. Put the potatoes and all other ingredients in the blender and puree until smooth.
  5. Chill and serve.
