Ingredients

Instructions

  1. Place the lentils inside a large pot. add 8 cups of water and bring to a boil.
  2. In the meantime, saute' the leeks, the carrots and the celery in coconut oil for five minutes.
  3. Pour the sauteed veggies into the pot with the lentils.
  4. Add beet greens, parsley, spices and salt. Bring to a boil again.
  5. Lower the flame and cook for about 20 minutes or until the lentils are soft, but not mushy.
