Kale, Tomato and Parmesan Bake is a quick, healthy and delicious side dish. I serve it with some quinoa for a complete dinner.

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In the meantime, saute the kale in oil until soft ( about 6 minutes.)
  3. Place the kale in a large casserole dish.
  4. Top with chopped tomatoes, salt and spices.
  5. Sprinkle with cheese and bake for 15 minutes or until the cheese begins to appear lightly brown around the edges.
