Instructions

  1. In a large pot, saute the onion in olive oil for 4 minutes.
  2. Add kale, carrots and butternut squash and 1 cup of water saute for 7 minutes.
  3. Add 7 cups of water and parsley and bring to a boil. Lower the flame and simmer for ten minutes.
  4. Add salt, pepper and garlic, let stand for 10 minutes and serve.
