Pumpkin yogurt parfait is a very tasty, creamy, seasonal breakfast dish. It is also amazing as a snack. Pumpkin puree would not have been my first choice in a combination with yogurt, but somehow everything worked out in an amazing way in this dish. Maple syrup adds sweetness and autumn-like feel, but it is not necessary.

Coconut yogurt can be used in place of cow milk’s yogurt and freshly made pumpkin puree is a lot better than canned one.

Instructions

  1. In a glass, layer the yogurt and the pumpkin puree.
  2. Sprinkle with syrup, granola and cinnamon. Serve.
