- 6 medium Fresh beefsteak or other large tomatoes
- 1/4 cup Extra virgin olive oil
- 1/2 medium Onion
- 6 cloves Garlic cloves diced
- 3 tablespoons Red wine vinegar
- 30 leaves Fresh basil diced
- 6 sprigs Fresh thyme
- 1 tablespoon Oregano
- 1/2 teaspoon Sea salt
- 1 pinch Cayenne pepper
- Combine all ingredients and blend until smooth.
- Simmer over a low heat for about 1 hour.
