Summer is known for its potlucks. Potluck recipes don’t have to include piles of mayonnaise and cheese: my healthy potluck dishes usually from the table fast, because they are as tasty as they are nutritious. Even if your friends or family would not ordinarily eat quinoa or lentils, they are more inclined to try these foods in an outdoor potluck setting. There is nothing I like better than a large table in the shade, covered with bowls of healthy foods after a fun day spent outdoors.
