Instructions

  1. Combine the first three ingredients in a bowl. Leave in the refrigerator for 4 hours to overnight.
  2. Add the desired amount of sweetener and mix to combine.
  3. Layer in a glass the strawberries, the coconut and the chia mixture.

    I use homemade coconut milk, but both canned and refrigerated versions are fine. Chia seeds inflate in liquid.

    Is this canned coconut milk? Or the same stuff I put in my shakes in the morning? I’m assuming the chia seeds are what change the consistency, but I’m just wondering.
