  1. Arrange the first 2 ingredients on a large plate in layers.
  2. Saute the lentils in 5 tablespoons of olive oil. Add curry, cumin, cayenne, 1 teaspoon of sea salt and saute for 4 minutes.
  3. Put the lentil mixture over the salad. Add scallions, parsley, avocado slices, sweet potatoes, pumpkin seeds.
  4. In a cup, combine the rest of olive oil, vinegar, salt. Mix, pour over the salad and serve.
