  1. Preheat the oven to 350 degrees F.
  2. Combine the first three ingredients in a bowl.
  3. Add mashed avocado and mix well.
  4. Spoon the batter onto the parchment-covered and lightly oiled cookie sheet.
  5. Bake for 8-10 minutes. Cool well before serving.

    Made these 3 times already. Love them! I did add a splash of vanilla and pinch of salt the second time around… but not necessary. Such a great way to use up a ripe avocado! Thank you!
