Lentil Burgers

Lentil burgers can be a delicious alternative to other meatless burger recipes. They can serve as  protein, iron and fiber-rich food, which is also soft and baby-friendly or they can be something different to try for a healthy family meal.

    Instructions

    1. Boil water. Add lentils, reduce heat to simmer and cook uncovered for 30- 40 minutes until lentils become soft and lose their shape. Drain the water. Grind oats into flour in a food processor. Add all other ingredients and process until smooth. Form into patties, 4 inches in diameter and 3/4-inch thick. Sautee in olive oil in a skillet.

        OK, I made these today and they were really good (much better than my last attempt from my own recipe). I was surprised that the batter was not very thick like I would expect but that was the secret that made all the difference.
        Unfortunately my picky 5 year old would not try them. Oh well, I just have to keep trying.
