Vegan Lemon Jello is on my list of go-to healthy kid snacks.   This jello is not your typical, food coloring-heavy sugar-crazy jello that attacks your body like a sugar bomb, but the gentler kind that tastes better. It is ridiculously easy to make this healthy jello. Gelatin is made using the feet of horses, so I am using plant-based agar-agar in this recipe to create the right consistency without the unhealthy ingredients.

    Ingredients

    Instructions

    1. Dissolve the cornstarch in the water in a small cup or bowl and set aside. Mix lemon juice with agave and lemon zest. Set aside. In a saucepan, bring 1 cup water to a boil. Do not cover. Reduce the heat, stir agar-agar to blend and simmer for 3-5 minutes, until agar-agar is dissolved fully. Add the rest of the water. Stir in the lemon juice with agave mixture along with the cornstarch mixture. Pour into small serving cups. Refrigerate for 4 hours before serving. Decorate with lemon slices.
