Do you like Mexican food? Try this lighter and leftover-friendly version of the old-time favorite: Healthy Mexican Burrito Bowl. We eat this dish quite often at our house.

You need some salad greens, some cooked brown ( or even white if it’s all you have) rice, some cooked or canned black beans and corn, a bit of cilantro, some chopped tomatoes and onions. You also need a few ripe avocados, a lot of freshly squeezed lemon juice, sea salt and a few drops of Tabasco sauce. If you have a fresh chili pepper you can forget the paprika.

Warm up the rice and the beans.

Take a bowl and layer all of the ingredients, except for the avocados and the lemon juice.

Mash up the avocados, using potato masher, add some sea salt and some lemon juice. This will be your quickie guacamole.

Squeeze the rest of the juice over the whole dish.

Sprinkle with cilantro and black pepper and serve!Mexican Burrito Bowl
