When it gets cold outside, nothing is better than a bowl of hot soup. When you put some of Parsnip, Sweet Potato, Kale and Rice Soup in your bowl,  you fill it up with fiber, iron, calcium, potassium, vitamins A, B, C and K, and multiple other nutrients. Oh, and this soup is ridiculously easy, too!

    Ingredients

    Instructions

    1. Place the lentils and the vegetables in water, bring to a boil. Add the veggie stock, the oil and the spices and simmer for about 2o minutes, or until the lentils are soft. Add the rice and bring to a boil again. Let stand for 15 minutes before serving.
