Now that the days are getting colder, nothing beats a good old stew. I like mine with a helping of quinoa or brown rice and some chopped fresh cilantro, sprinkled on top. This stew also works on top of pasta ( quinoa or whole wheat variety is healthier) or on top of a thick slice of bread. It is rich in iron, calcium, magnesium, potassium, vitamins A, B, C and K and fiber among other nutrients. The recipe calls for a lot of olive oil, because the stew is supposed to be heavy and hearty. You can easily lower the amount of oil to 3/4 cup.

  1. Saute the onion in 4 tbsp. olive oil. Add 1/2 cup of olive oil. Add the squash, the carrots, the kale and the sweet potato. Add 1/2 cup water. Bring to a boil and simmer for about 5 minute or until soft. Add the chickpeas, the broccoli, the rest of the oil and the spices. Mix and simmer for another 5-7 minutes.
