I promise we’ll be done with the pumpkin puree recipes soon. But not quite yet! I was inspired by this pumpkin pudding and mixed pumpkin into our breakfast today. It turned out to be a great success. Next time I will try it with some almond butter instead of pecans.
Festive Pumpkin Oatmeal

- 1 cup rolled oats
- 2 cups water
- 1 cup pumpkin puree
- 1/3 cup Coconut oil or butter
- 3 tbsp. maple syrup
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1 pinch nutmeg
- 1 handful pecan slices
- 1 handful raisins
- Cover the oats with water in a saucepan and cook until all the water is absorbed.
- Mix in the pureed pumpkin, the raisins and the pecans.
- Add coconut oil, maple syrup and spices. Serve hot.
