School is starting soon. If you feel permanently tied to the typical boring peanut butter and jelly sandwich in your kid’s lunch box, try this antioxidant-rich sandwich. I know it sounds weird, but it actually tastes good! Add a celery stick, too, if you feel adventurous.

If your kid is not allergic to nuts, feel free to substitute almond or peanut butter for sunflower butter.
