My family is not completely vegan, but we mostly are. We can have a pizza once in a while. Or we can eat a yogurt here and there. We eat fish about once a week. Largely, though, we stay away from animal products.
My three year old son really loves yogurt, so I’ve been trying to make a non-dairy version of it for a while. The recipes I found on Google seemed complicated and time-consuming, so I took my recipe for coconut cream and added some lemon juice to it, taking the avocado out. It turned out great! This “yogurt” is richer than what you are perhaps, used to, but, hey, it’s not the real thing, so who cares? It’s a fun new breakfast-dessert kind of thing. Enjoy!

- 1 cup Raw cashews soaked nuts are better, but I didn’t have the time
- 1 cup Raw shredded coconut
- 1/4-1/2 cup Water
- 1 Banana
- 1/2 tsp Lemon juice
- 1-2 tsp Vanilla extract optional
- Blend everything on high for about 5 minutes, stirring periodically. If you want a lighter consistency, add more water and if you want the "yogurt" to be more sour, add more lemon juice. Adding fruit, nuts or berries makes a very nice flavored "yogurt."
