    1. Lightly toast the bread. Spread the pesto on both slices. Put the greens on top of the pesto sauce. Put the carrots over the greens and onions over carrots. Put the tofu over the onions. You can add more pesto to go on top of the tofu, if you wish. Close the sandwich and serve right away!
